Garlic and Pepper Pork with rice (ข้าวหมูทอดกระเทียมพริกไทย)


Garlic and Pepper Pork
(Moo Tod Kra-tiem Prik-tai)

Ingredients

1/2 cup pork, cut into 1 cm strips
1 tbsp. or 3-4 garlic cloves, crushed
1 tsp black pepper, crushed
2 tbsp vegetable oil
1 tbsp oyster sauce
1 tsp fish sauce
1/4 tsp sugar or to taste

To garnish:
1-3 sprigs coriander/Cilantro
1 tsp fried garlic
1 pinch black pepper

Cooking Instructions

Heat a wok over medium heat, add the oil and garlic. Stir-fry until the garlic is about
to turn gold (make sure it doesn't burn) then remove from the wok and set aside.

In the same wok, add pork and cook about 3-4 minutes make sure the pork is cooked then quickly add crushed pepper, fish sauce, oyster sauce, sugar and fried garlic. Mix well and serve with steamed rice or turmeric rice with chilli sauce (your choice)

Home-made Paneer/ Cottage Cheese

มาทำชีสทานเองกันเถอค่ะ

เรื่องของเรื่องก็คือ จขบ. มีนมใกล้หมดอายุอยู่เกือบสองลิตร จะดื่มก็ไม่ทันแล้ว ก็เลยคิดหาวิธีเล่นแร่แปรธาตุ คือไม่อยากให้ท้องทิ้งไปเปล่าๆ เสียดายอ่ะ
ก็เลยนึกได้ขึ้นมาว่าลองทำพะเนีย (Paneer) ดูดีกว่า หลายคงอาจจะไม่รู้ว่าพะเนียคืออะไร ส่วนใหญ่คนที่ทานอินเดียจะรู้ว่าพะเนียก็คือชีสชนิดหนึ่งที่ชาว
อินเดียนำมาทำอาหารหลายๆ อย่าง ส่วนวิธีทำนั้น ง่ายอย่างเหลือเชื่อเลยล่ะค่ะ

สิ่งที่ต้องเตรียม
- นมสด 1 ลิตร
- น้ำมะนาว 1 ช้อนโต๊ะ
- ผ้าขาวบาง

1. ต้มนมให้เดือด แล้วก็เทน้ำมะนาวลงไป จะเห็นว่านมเริ่มจับตัวกันเป็นก้อนขึ้นทันที จากนั้นให้ปิดไฟ เอาตะแกรงมากรองเอาส่วนที่เป็นน้ำออกไป เอาเนื้อชีสที่ได้มาใส่ผ้าขาวบางแล้วใช้ยางมัดเอาไว้
2. หาของอะไรหนักๆ มาทับเพื่อที่จะทำให้ชีสจับตัวกันเป็นก้อนแข็ง อยากให้เนื้อแน่นมากเท่าไหร่ให้ทับ
เอาไว้นานเท่านั้น  แต่จขบ.ทิ้งไว้แค่ประมาณ สี่สิบห้านาที จากนั้นก็เอาชีสที่ได้มาตัดเป็นก้อนสี่เหลี่ยมลูกเต๋า  กลายเป็นชีสพะเนียในทันใด

ห่อหมกหน่อไม้

 

ห่อหมกหน่อไม้ใส่ไก่ 
           วันนี้เกิดครึ้มอกครึ้มใจอยากกินห่อหมกขึ้นมา  ก็เลยจัดแจงโทรไปถามสูตรจากแม่ดู เพราะว่านานแล้วที่ไม่ได้กินห่อหมกเจ้าโปรด  ห่อหมกสูตรนี้เป็นสูตรของเจ้าตลาดนัดที่เราชอบและเคยไปซื้อมากินบ่อยๆ  (แต่ไม่เคยทำกินเอง) ไม่รู้เหมือนกันว่าต้นตำรับมาจากไหน เพราะคิดเอาเองว่าถ้าเป็นอีสานแท้ มันต้องไม่มีกะทิ ถ้างั้น จขบ.คงต้องขออนุญาติเรียกเจ้าอาหารจานนี้ว่า "ห่อหมกลูกครึ่ง" ไทย-อิสาน ก็แล้วกัน ส่วนเครื่องปรุงหาได้ไม่ยากจนเกินไปค่ะ  แนะนำว่าการปรุงรสนั้นต้องให้ชิมดูเรื่อยๆ อย่าให้หนักมือเพราะไม่งั้นจะแก้ยาก เผลอๆเสียของอีก มาดูกันค่ะว่าทำกันอย่างไร

สิ่งที่ต้องเตรียมมีดังต่อไปนี้
- หน่อไม้เป็นแท่งๆ ขนาดปานกลาง ประมาณ 4-5 หน่อ(ใช้หน่อไม้ใบย่านางที่ขายในขวดโหลก็ได้นะคะ)
- น้ำใบย่านาง
- กะทิ
- เนื้อไก่ 
- ใบโหระพา
- น้ำปลา
- น้ำปลาร้า (นิดหน่อย)
- น้ำตาล (ใส่นิดหน่อยเพื่อตัดความเค็ม)
- แป้งข้าวเหนียว
- พริกแกงแดง

วิธีทำ
- เอาหน่อไม้มา ใช้ช้อนส้อม ขูดให้เป็นเส้นๆ ฝอยมากฝอยน้อยแล้วแต่ชอบ จากนั้นก็เอาไปใส่หม้อต้มให้จืด ให้ดมดูด้วยว่าหน่อไม้ที่ซื้อมามีกลิ่นแรงหรือเปล่า  ถ้ากลิ่นแรงให้ต้มจนกว่ากลิ่นจะหายไปค่ะ  ต้มเสร็จก็ให้บีบเอาน้ำออก  แล้วก็เอามาแช่น้ำใบย่านางทิ้งไว้ซักพัก

- เอาแป้งข้าวเหนียวมาละลายน้ำเตรียมไว้ค่ะ ชอบให้ห่อหมกข้นมากก็ใส่มาก ข้นน้อยใส่น้อย

- เอากะทิ (ส่วนหัว) มาใส่กะทะ  แล้วก็ใส่พริกแกงลงไป  ผัดให้เข้ากัน พอกลิ่นหอมแล้วก็เอาไก่ลงมาผัด พอใกล้จะสุกแล้วก็ให้เอาหน่อไม้ใส่ลงไปคนต่ออีกนิด ใส่น้ำใบย่านางลงไปด้วยซักประมาณ 3-4 ช้อนโต๊ะนะคะสีจะได้สวยๆ

- ใส่น้ำปลา  น้ำปลาร้า น้ำตาล (จะใส่ก็ได้ไม่ใส่ก็ได้) อย่าให้หนักมือนะคะเพราะเดี๋ยวจะเค็มแล้วแก้ไขไม่ได้  ชิมดูให้ได้รสชาดแบบที่ชอบจากนั้นก็ให้เอาแป้งข้าวเหนียวที่ละลายน้ำไว้ลงมาคนให้เข้ากัน ชอบแบบข้นๆ ก็ใส่มากหน่อย ปิดแก๊สแล้วเอาใบโหระพามาคนใส่ เป็นอันเสร็จค่ะ

Spicy Fragrant Chickpeas (Chole)


Ingredients
- 200 g (1 cup) dried chickpeas, soaked in water for 5 hours; or 1 tin canned chickpeas, rinsed.
- 1 to 2 tablespoons oil
- 2 tablespooons ghee or oil
- 1 teaspoon cumin seeds
- 2 bay leaves
- 1 large onion, thinly sliced
- 2 large ripe tomatoes, thinly sliced
- 2 tablespoons coriander powder
- 1 tablespoon cumin powder
- 2 tablespoons chilli powder (or to taste)
- 1 teaspoon turmeric powder
- 2 teaspoons garam masala
- 1 1/2 teaspoons salt
- 375ml (1 1/2 cups) water
- 1 1/2 tablespoons freshly squeezed lime or lemon juice
- 1 or 2 bay leaves

Garnishing
- 1 tablespoon finely cut ginger strips
- 2 tablespoons chopped coriander leaves

Preparation
1. Place the soaked chickpeas in a pan and add sufficient water to cover. Bring to a boil, and cook until the chickpeas are tender, about 30 minutes. Drain and set aside. (If using canned chickpeas, use straight from the can after rinsing.)

2. Heat the ghee or oil in a wok over medium heat. Add the cumin seeds and bay leaves and stir-fry until aromatic. Add the onion slices and stir-fry over low heat until the onion turns golden brown, about 5 minutes.

3. Add the tomatoes, coriander, cumin, chilli and turmeric powders, garam masala and salt, and stir-fry over very low heat until the oil separates.

4. Add the chickpeas, and the water. Bring to a boil and cook for 5 minutes. Remove from the heat.

5. Stir in the lime juice, strips of ginger and coriander leaves before serving.
